Scare you?
Well, the news is trying to scare me and my poor mother.
Everything from Mumbai attacks to bombs in the metro.
My favorite is try to not to look "too" American.
How's that?
So, I'm just going to bake.
That always makes everything better.
Take my advice and just double the recipe (am I the only person who had no idea there was Cocoa in Devil's Food Cake?)
April 30, 2010Red Velvet Cupcakes with Buttercream Frosting
CUPCAKES
1 1/4 cup flour
3/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1 T cocoa powder
3/4 cup vegetable oil
1/2 cup buttermilk
1 egg
1 T red food coloring
1/2 tsp white vinegar
1 tsp vanilla
Sift together flour, sugar, baking soda, salt, and cocoa powder. In a separate bowl, whisk together oil, buttermilk, egg, food coloring, vinegar, and vanilla. While mixing at medium speed, gradually add dry mixture to wet mixture until just combined. Fill cupcake liners. Bake at 350 for 25 minutes, or until an insterted toothpick comes out clean.
ICING
1 stick room temp. butter
2 1/2 cups confectioner’s sugar
1/4 cup milk
1/2 tsp vanilla
a dash of almond extract
Beat butter until smooth and creamy. Add sugar, milk, vanilla, and almond extract and beat until spreadable consistency. Add additional sugar if needed

Listening to Justin Bieber while baking is totally optional, but for some reason I do it.

In 1976 I was in Europe...the Bader/Meinhoff gang was running amok all over blowing up train stations...I was searched from head to toe countless times...the customs guys went through a box of tampons like it was a bomb...I told him to just throw it out and he made me do it....in 1978 I was in the UK and they were in the process of taking up all the trash cans because the IRA (Irish Republican Army) was blowing up buildings and people (even some royals) by placing bombs in trash cans....( this by the way was funded by many devout Irish Catholics in the US...especially Boston...but that is another story)...my point...this goes on all the freaking time...We in the US only care now because of 9/11..be sensible..but don't freak.

Wise words Carol, and so very true. I don't believe most Americans understand how much 'terrorism' goes on around the world that doesn't involve folks who live in a dessert. :) It is scary Peg, but heh, you have better chances of getting shot in the States...and that happens all the time!
